MANCHEGO + GUAVA
Cut the cheese into wedges first , to your desired size. Use the cheese as a form to cut the guava paste to be the same size. Stack the cheese and guava together . Use half the orange and squeeze the juice over all before plating. Use the remaining orange in the center , adding rosemary and oregano sprigs as garnish.
